Handling Tips
Refrigerate after washing

Select green heads with crisp outer leaves and compact inner leaves. To wash, remove the core with a paring knife, open up the head with your hands, immerse in a bowl filled with cool water and swish gently. After about 30 seconds, remove lettuce, shake water off the leaves and blot dry on paper towels or clean dish towel. Or use a salad spinner to wash and dry. To store, roll leaves in paper towels and a plastic bag; keep in refrigerator crisper up to one week.
