Lacinato kale, sometimes called dinosaur or Tuscan kale, has a long history in Italian and Tuscan cooking. This kale has a very distinctive flavor, and the leaves have a very deep blue-green color. Research has found 45 different flavonoids in kale, which are believed to help in the avoidance of chronic inflammation and oxidative stress.

Lacinato or sometimes called Dinosaur kale is particularly well suited to braising in a bit of broth. Or, simply blanch it in boiling water, then sauté in olive oil with garlic and a chili or two, if you like. A sprinkle of salt and a squirt of lemon is nice as well.

Handling Tips
Keep Loosely Wrapped

When purchasing Foxy lacinato kale, make sure to look carefully at the leaves; you want to avoid brown or wilted leaves and look for ones that are fresh, with a vibrant blue-green color. Once home you are going to want to store the lacinato kale loosely wrapped in plastic. It will keep in the fridge for up to four days. Make sure to rinse the leaves before you cook or prepare the kale. When preparing you should trim all the stem ends, and discard all of the wilted leaves or tough stems.
